Home Economics students were taken on field trips to supplement their education. Multnomah Hotel in Portland, OR was one such destination. Here, students gained real-world experience in institutional management. "Institutional economics" was introduced to students at OAC starting in the first part of the twentieth century. Seniors could take an elective called "Institutional Housekeeping." This class would "prepare women to become professional housekeepers in institutional such as school dormitories, hospitals (work necessary for dietitian included), orphanages, and hotels." [1] During the school year of 1920-21, courses in management of dormitories and tearooms were offered, as well as advanced institutional management. [2] In 1936-37, Dean Milam and Miss Fritchoff supervised a new type of graduate course--a field trip to the Orient.
