Thomas Shellhammer is the Nor'Wester Professor of Fermentation Science at OSU, where he runs a lab dedicated to the chemical and sensory analysis of hops. With his guidance, undergraduate and graduate students alike receive hands-on experience in the brewing process. In this interview, Shellhammer discusses his own path to research, as well as the trajectory of OSU's Fermentation Science program within the Department of Food Science & Technology. Shellhammer also discusses aspects of the program related to funding and local collaborations.
